This recipe from the new Oakville Grocery Store, The Cookbook layers salty smoked salmon, fresh goat cheese, lemon aioli, pickled onions and arugula on artisan bread for an explosion of flavor.
These sandwiches can be enjoyed on their own or as part of a larger spread, or for smaller servings, cut each sandwich into 4 pieces and serve stabbed with a cocktail pick.
Skyhill Goat Cheese and Smoked Salmon Sandwich
2 sandwiches
material
4 slices of homemade bread, such as Della Fattoria semolina bread
¼ cup reserved Meyer lemon aioli
¼ pound fresh goat cheese (preferably Skyhill chevre)
6 ounces thinly sliced smoked salmon
¼ cup pickled onions
1/2 cup arugula
1 tablespoon chopped fresh tarragon

Place the bread slices on a cutting board. Spread one side of each slice evenly with the aioli sauce.
Divide the goat cheese evenly between 2 slices of bread, spreading evenly.
Layer the salmon, onion, arugula, and tarragon on top of the cheese-topped bread. Top with the remaining bread and press lightly. Cut the sandwich in half and serve.
