Wilson stopped by “GMA3” to whip up this delicious recipe.
Chef Melba Wilson, known for her iconic Harlem restaurant Melba’s Restaurant, is set to open more locations across New York.
The Food Network personality, who has been called the Soul Food Queen of Harlem and the Queen of Comfort Food, recently stopped by “GMA3” to cook up a delicious and refreshing Mandarin Chicken Salad.

Mandarin Chicken Salad

2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon fresh garlic (minced)
3 teaspoons dried oregano
1/2 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 boneless chicken breasts with skin
1/2 cup mayonnaise
1 ripe Hass avocado, diced
3 fresh mandarins, peeled and cut, or 1 11-ounce can of drained mandarins

In a large resealable plastic bag, mix together the olive oil, lemon juice, garlic, oregano, onion powder, salt, and pepper.
Add the chicken breasts and mix until well combined, under the skin and on all sides.
Close the bag and refrigerate for 1.5 to 2 hours.
Preheat oven to 450 F. Drain off the marinade and transfer the chicken to a baking pan.
Cover with foil and cook in preheated skillet for 15 minutes.
Remove the foil, return to the oven and bake for an additional 15 to 20 minutes, until the chicken is browned throughout and a meat thermometer registers 165°F.
Remove chicken from oven and allow to cool to room temperature.
Peel and discard the skin and cut the flesh into bite-sized pieces.
Combine mayonnaise, mandarin orange, avocado, and chicken in a mixing bowl.
Taste and add more salt and pepper if needed.
Refrigerate for 1 hour before serving.
