Summer is the season for simple, easy meals, so here are three dishes you can enjoy on hot summer days.

Black Shrimp Bowl

Yield: 4 servings

Preparation time: 10 minutes

Estimated time: 25 minutes

material

2 cups cooked brown rice

1 pound shrimp (tails removed, shelled, and deveined)

1½ teaspoons cumin

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

Kosher salt

Freshly ground black pepper

2 tablespoons olive oil (1 tablespoon and 1 tablespoon)

1 cup roasted corn

1 red bell pepper, diced

2 tablespoons chopped fresh coriander

Juice of 1 lime (divided)

1 avocado, thinly sliced

Step 1: Prepare the shrimp: Place shrimp in a large bowl and stir in the cumin, paprika, garlic powder, and onion powder. Season with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp and sauté until lightly browned.

Step 2: Make the Corn Salad: In a medium bowl, combine the corn, pepper, and coriander. Add 1 tablespoon olive oil, the juice of half a lime, and season with salt and pepper.

Step 3: Assemble bowls: Divide the rice among 4 bowls. Top each with shrimp, corn salad, and 1/4 avocado. Garnish with cilantro and a squeeze of lime juice to serve.

Easy Mexican Casserole Recipe

Preparation time: 15 minutes

Cooking time: 20 minutes

Estimated time: 35 minutes

material:

1 pound ground beef

2 tablespoons taco seasoning

1 can of chili beans

1 can of Rotel

15 ounce can of canned tomatoes

12-16 tortillas (cut into quarters)

1 cup sour cream

2 cups shredded cheddar cheese

Step 1: Brown the meat in a large skillet. Drain.

Step 2: Add taco seasoning, beans, diced tomatoes, and crushed tomatoes to the skillet.

Step 3: Spray a 9×13 casserole dish. Place a layer of tortillas in the bottom.

Step 4: Pour half of the meat mixture over the tortillas. Spread the tortillas over the meat mixture. Sprinkle with half of the cheese.

Step 5: Place another layer of tortillas on top of the cheese and meat mixture. Pour the remaining meat mixture over the tortillas. Spread sour cream on top and sprinkle with the remaining cheese.

Step 6: Bake at 350 degrees for 20 minutes or until cheese is bubbly.

Frozen Margarita Mousse

Preparation time: 20 minutes

Freezing Time:

material:

1 can (14 ounces) sweetened condensed milk

1/2 cup ready-to-drink margarita mix

1 tablespoon sugar

1 1/2 teaspoons grated lime zest

1 tablespoon lime juice

5 drops green food coloring (optional)

1 box (8 ounces) frozen whipped cream, thawed

Pretzel Topping:

⅓ cup finely crushed pretzels

4 teaspoons melted butter

1 tablespoon sugar

Lime slices

direction:

Step 1: Combine first 5 ingredients and mix well. Add green food coloring if desired. Fold whipped cream into topping.

Step 2: To make the pretzel topping, combine the pretzels, butter, and sugar.

Step 3: Spoon lime mixture into 6 glasses and top each glass with about 1 tablespoon of pretzel topping.

Step 4: Freeze until firm, approximately 4-6 hours. Serve frozen with lime slices.
