Just before Wimbledon, the bar team (many of whom are Attaboy alumni) were planning to open Good Guy in the summer of 2024 and felt that a spritz version of the Pimm’s Cup would be the perfect drink for the opening. “We wanted this drink to be accessible and satisfying for any palate or at any point in the evening – a starter, intermezzo and finisher all rolled into one,” says the drink’s creator, Sam Ross. Based on housemade Pimm’s, the spritz is a simple and refreshing cocktail layered with lemon juice, agave syrup and prosecco.

1 1/2 ounces House Pimm’s (see editor’s note)

1/2 ounce agave syrup

1/2 ounce lemon juice

3 ounces of Prosecco, topping

- Add first 3 ingredients to glass with ice.
- Pour in the Prosecco.
Editor’s Note
House Pimm’s
12 ounces of gin (preferably Ford)
12 ounces sweet vermouth (preferably Carpano Antica)
2 ounces Grand Marnier
Cherry Herring 1 1/2 oz.
Mix all ingredients together in a container and pour into a jar. Store indefinitely.
