In a world of ever-changing diet trends, there is one unwavering truth. It’s that everyone loves carbs. Really, who can resist a hearty bowl of spuds or a scoop of Ree Drummond’s famous macaroni and cheese? But then again, carbohydrates have come under a lot of criticism in recent years.Phoebe Lappin’s latest book for lovers of pasta, bread, and other starchy foods carnivore A revelation in the carbohydrate conversation.

A food and nutrition veteran, Phoebe loves pasta as much as the next person. However, when she was 22 years old, she was diagnosed with an autoimmune disease called Hashimoto’s thyroiditis, forcing her to take a step back from her favorite foods. Her diagnosis was even more shocking when, having quit her corporate job and working in the food industry, she was told to completely change her diet. Phoebe struggled to go gluten-free, and she jokes that she “went through every stage of grief.”

But that was just the beginning of Phoebe’s health journey, which she chronicled on her blog. feed me phoebe, and also in her previous books. “There’s a lot of very extreme voices on the internet saying you have to go paleo or you have to cut out all carbs,” she says. “When I was dealing with these chronic issues, I felt really confused and really lost when I tried to do anything extreme.” Phoebe wasn’t alone.

She says she’s heard from people in a similar boat who are experiencing unpleasant symptoms from extreme dieting, as well as people who are simply “obsessed with food.” “I think in the health world we often lose sight of the fact that pleasure is really important. I always say food is medicine, but food is more than just medicine,” says Phoebe.

Phoebe stopped her restrictive diet and instead found a more balanced approach to eating and discovered healthy ways to enjoy her favorite foods, including French fries.now carnivorePhoebe is getting her favorite carbs back once and for all.

What exactly are carbohydrates and how do they affect your body?This is just a small part of what you will learn in the first half carnivore. Phoebe gives us some great advice on making vegetables the star of your meal and how to layer rice at the bottom of your bowl so you don’t eat it all at once. This meat and potatoes book consists of 130 recipes that are every carb lover’s dream. Dishes include spinach and artichoke dip macaroni and cheese, a healthy take on breaded chicken tenders, and imaginative desserts for special occasions.

Recipes are separated by type of carbohydrate, so even if your pantry is overflowing with plain old oats or spaghetti, you can easily flip through the chapters and get started cooking. Phoebe follows a gluten-free diet, and she calls this book “Gluten Options.” That means she can choose her own adventures. The best part is that the recipes aren’t complicated and you don’t have to fill your shopping cart with unfamiliar ingredients. “For weeknights, I love quick, one-bread meals,” Phoebe says, and this book is full of them.

This crab cake twice-baked potato recipe puts an unexpected twist on spuds. Crabcakes are usually stuffed with bread crumbs, but Phoebe folds some of the potato pulp into them. The potatoes not only stretch out the luxurious chunks of crab meat, but also bring out the flavor of the crab meat to its fullest. “You end up with really delicious, soft, tender crab cakes in the middle of the potatoes,” she says. What more could you want from a meal?
