    Olive oil

    Medium sized onion (chopped)

  • 1

    Cut a large celery stalk into 1/4-inch pieces

  • 1

    Wash a medium sized carrot and cut it into 1/4 inch pieces

  • 3

    Garlic (finely chopped)

  • 2 Teaspoon

    Thyme leaves (coarsely chopped)

  • 3

    6.5 oz canned smoked baby clams

  • 1

    28 ounce canned peeled plum tomatoes

  • 2 Tablespoon

    Tomato paste

  • 1/2 B.C.

    dry white wine

  • Ten Oz.

    Wash and cut small Yukon Gold potatoes into 1/2 inch pieces

  • 1/2 B.C.

    flat leaf parsley leaves (chopped)

    1. Steps 1Heat oil in a 4-quart Dutch oven over medium heat, add onion, celery, and carrots, and sauté, stirring occasionally, until softened.
      Cook for 6 to 8 minutes. Add the garlic and thyme, stir, and cook for 1 minute.
    2. Steps 2Meanwhile, drain the clams, reserving the water and coarsely chop the clams. Drain the tomatoes, reserving the juice and mash the tomatoes (we use our hands).
    3. Steps 3Add the tomato paste to the onion mixture and cook, stirring, for 1 minute. Add the wine and cook for 1 to 2 minutes or until reduced by half.
    4. Steps FourAdd the tomatoes and their juices, the reserved clam juice, and the potatoes. Cover and reduce heat to low. Simmer for 15 to 18 minutes until the potatoes are tender. Add the chopped clams and reduce heat to low and simmer for 2 minutes. Stir in the parsley and serve.

Serving Size: Approximately 245 calories, 10.5g fat (1.5g saturated fat), 8mg cholesterol, 1,251mg sodium, 29g carbohydrates, 6g fiber, 9g sugars (0g added sugars), 11g protein
