Pasta salad recipes have a bad reputation for being random. Not every picnic or barbecue comes with a pasta salad, and salads are often bland. But pasta salad can be the star of the show (and best of all, it’s one of the easiest dishes to put together). This is the kind of dish you can make well in advance of the party, bring in a giant bowl, and be licked clean by the end of the party.
For the Marry Me Chicken Pasta Salad, first marinate a few chicken cutlets in a resealable bag for about an hour. Next, grill the chicken for the perfect toasty summer flavor. Cut the chicken into bite-sized pieces and combine with boiled pasta, asparagus, sun-dried tomatoes, and homemade creamy tomato-basil dressing. Place all of this in the refrigerator to chill until ready to eat. Just before serving, add some of the dressing and the arugula or baby spinach. If desired, garnish with basil leaves, crushed red pepper, and grated Parmesan cheese.
