Strawberry season is upon us, a fruitful time for Michiganders. Delicious on their own, strawberries are a great addition to sweet and savory dishes.
Shanti Apelo, a registered dietitian and health and wellness spokesperson for Detroit-based Blue Cross Blue Shield of Michigan, shares three recipes that use strawberries.
Strawberry cottage cheese toast
material
- 2 slices of bread
- 1/2 cup cottage cheese
- 1/2 cup strawberries, sliced
- 2 tablespoons balsamic vinegar
- 2 tablespoons almonds (sliced)
Instructions
- Toast the bread. Spread 1/4 cup of cottage cheese on each slice. Top with sliced strawberries, a drizzle of balsamic vinegar, and sliced almonds.
Dark Chocolate Chia Seed Pudding with Strawberries

- 1 cup oat milk
- 2 tablespoons almond butter
- ¼ cup chia seeds
- 2 teaspoons cocoa powder
- 5 teaspoons of honey
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Strawberries for decoration
Instructions
- Combine all ingredients in a medium bowl and mix vigorously, being sure to mix in any cocoa powder that has stuck to the sides and bottom.
- Pour into serving cups, cover and refrigerate for at least 4 hours, but preferably overnight, until thick and creamy.
- Serve with fresh strawberries.
Strawberry Garden Feta Salad
material
- 4 cups spinach
- 1 cup strawberries (sliced)
- 1/2 cup blueberries
- 1/4 red onion, thinly sliced
- 1/2 cup regular or candy pecans
- 1/2 cup feta cheese, crumbled
- Balsamic vinaigrette (optional)
Instructions
- Combine all ingredients except vinaigrette in a large bowl. Stir in vinaigrette or serve with dressing on the side.
