PUEBLO, Colo. — Some of Pueblo’s best eateries are showing off what they can do with the city’s prized crop: chili peppers.
The Spice Up Spring Food Competition was held Friday and was sponsored by the Pueblo Chamber of Commerce.
Restaurants, food trucks and kitchens across Pueblo County were challenged to compile their best recipes involving Pueblo chili peppers.
“It’s just cool to get new things and experiment,” said Drew Milberger of Milberger Farms. “I think everyone was surprised when that slopper came out, but it turned out to be the biggest thing. You can’t get the new biggest thing unless you try new things. That’s it.”
Farmers started planting crops earlier this month.

Friday’s contest winner, Twenty-One Steak, won each category and contest. They will receive a plaque and cash prize, and their recipe will be published in the 30th Anniversary Pueblo Chili & Frijoles Cookbook.
Below is a list of winning dishes in each category.
- Appetizer: Crispy Pueblo chile on top of braised pork belly potato gratin
- Main dish: Lajas Puebla, an improved version of the Cuban bean and rice dish congri.
- Dessert: Brownie petit gateau with Pueblo chili jelly
- Cocktail: Pina Picante, featuring candied Pueblo chili pineapple garnish
