How a tick bite can cause a meat allergy
Alpha-gal syndrome, also known as red meat allergy, is caused when a tick bites a person and injects sugar molecules found in their saliva.
For some people, that sugar can trigger an allergic reaction, and eating red meat can further trigger an allergic reaction. Why: Beef, pork, and lamb also contain a sugar known as alpha-gal.
Other mammalian foods, such as milk, other dairy products, and gelatin, can also cause allergic reactions. Reactions can range from mild, such as hives or an itchy rash, to more severe. Difficulty breathing and low blood pressure.
Unlike many allergy conditions that begin immediately, red meat allergy symptoms usually don’t appear until two to six hours after eating, researchers and doctors say.
A typical case is someone who eats a fancy dinner that includes red meat. “In many cases, the greasier the meat, the more likely you are to have a reaction,” said Scott Commins, an allergist and immunologist at the University of North Carolina at Chapel Hill.
