MasterChef champion Gary McLean has shared his recipe for the perfect Scottish tablet. This is sure to be a hit with kids and adults alike. This crumbly, buttery, and extremely sweet treat has long been a favorite among Scots, but it’s also a dentist’s nightmare.
This iconic snack has been loved by generations, and perhaps part of its appeal is that it’s easy to make. However, many Scots will attest that it is actually quite difficult to master.
Luckily, Scotland’s first national chef has the perfect recipe so you too can master your tablet. Gary, from Glasgow, who was awarded the title in 2017 after winning MasterChef the previous year, developed the recipe while researching his popular cookbook, Kitchen Essentials.
“There’s nothing like homemade tablets – a little luxury. They’re so easy to make at home and are the perfect recipe to pass on to your children and grandchildren to continue this sweet Scottish tradition,” he says. I did.

Here’s Gary’s mouth-watering Scottish tablet recipe:

1 can of condensed milk.
1 kg of granulated sugar.
400ml of milk.
250g unsalted butter.
20ml of vinegar.
A few drops of white chocolate.
Instructions:
1. First, pour the condensed milk, sugar and milk into a heavy-bottomed saucepan (preferably a wide-bottomed one) and heat gently until the sugar dissolves.
2. Bring the mixture to a boil and continue stirring for 20 minutes.
3. Remove the pan from the heat and stir in the butter vigorously for about 7 minutes. The mixture should start to feel slightly grainy around the sides of the pan.
4. When it becomes medium brown, turn off the heat.
5. Carefully pour the mixture into a buttered tray and let it cool.
6. Once it has hardened to the touch, make a 3cm square cut and wait until it has completely hardened before removing it from the mold.
