NORTH OAKS, Minn. — A popular French-American restaurant in North Metro is celebrating its 20th anniversary.
To celebrate, Toria in North Oaks is bringing back a long-time customer favorite.
Executive Chef Graham Messenger joined KARE 11 on Saturday and cooked up a storm.
recipe: seared scallops
- Garlic leaves, lemon and beurre monte
- 4 jumbo scallops
- 1 lemon
- 12 garlic stalks
- 1/2 pound unsalted butter
- salt and pepper
1. Bring 2 tablespoons of water to a boil in a small pot. Gradually whisk in 1/2 pound of chilled cubed unsalted butter over low heat. Season with salt and lemon zest. Please stay warm.
2. Bring a pot of salted water to a boil and boil the prepared garlic stalks for 1 minute. Remove and place in an ice bath to cool. Pat dry with paper towels, peel the top and cut 1 1/2 inches below the top. Slice the rest thinly and set aside.
3. Peel the peeled lemon and remove the pieces from between the membranes. Let’s set it aside.
4. Heat a sauté pan over medium heat. Season the scallops with salt and pepper. Place the blanched garlic stalks in the beurre monte and turn the heat to low. Add some oil to a frying pan and fry the scallops. Once browned, flip it over, add a spoonful of beurre monte and cook a few times. Remove to a tray lined with paper towels. Remove the tops of the garlic stalks onto a tray and transfer some of the sliced bottoms to the beurre monte.
5. Arrange 3 scape tops and 1 scallop on a warmed plate. Spoon some of the beurre monte over the scallops and around the plate. Place a few lemon slices around the plate and a few scape slices around and on top of the scallops.
