material:
- 1 1/2 cups fresh wild (or store-bought) raspberries, blueberries, or sliced strawberries (rinse)
- 5 slices of whole wheat bread with ears removed
- 1/2 teaspoon sugar
- vanilla yogurt
direction:
- Mix berries and sugar.
- Place a spoonful of berries in the bottom of a small 2-cup-deep dish. Cover the berries with a layer of bread. Continue layering the berries and bread until the plate is full, then top with the bread.
- Cover the plate with plastic wrap and place a bowl on top that will fit just inside the berry plate. Place something heavy on top to push down the fruit and bread layer.
- Refrigerate overnight. Check the dish to make sure no juices are running to the top. You may need to replace heavy items with lighter items to prevent spills.
- Serve sprinkled with a little vanilla yogurt or powdered sugar.
Serves 2 people.
