Finding delicious, easy-to-make, nutritious recipes is essential for anyone trying to lose weight. Luckily, Courtney Kassis (MS, RD, LDN, aka @dietitianwithtwins), who successfully lost 55 pounds post-pregnancy, recently shared her favorite high-protein dinner bowl recipe that helped her lose weight and manage her thyroid symptoms. Kourtney’s weight loss journey
“I lost 55 pounds post-partum, but the beginning of my weight loss journey was so hard,” Courtney explains at the beginning of the video. Despite eating healthy and exercising, she struggled with inflammation and weight loss. A thyroid condition further complicated her journey. “Post-partum, I was eating really healthy and exercising, but I had really bad inflammation and I couldn’t lose weight. I got tested post-partum and my TSH was at 18 and my thyroid antibodies were skyrocketing. So I was totally autoimmune-inflammatory and it was really hard for me to lose weight.”
To support her thyroid and kick-start her weight loss, Courtney made some drastic changes to her diet. One recipe in particular made a dramatic difference: “The first thing I did to support my thyroid and hopefully kick-start my weight loss was to eliminate gluten and dairy. And this was one of my favorite recipes at the time – super high protein, super easy and super satisfying.”
Even after reaching her goal weight and getting her thyroid function back to normal, Courtney says she still enjoys this recipe. “Since I’ve reached my goal weight and my thyroid is back to normal, I’ve incorporated dairy more often, but this recipe is still in my rotation. It’s possible to have a protein bowl without dairy, but you have to be intentional about it. Planning and finding high protein recipes like this is a must.”
