They say it’s hard to reinvent the wheel, but what about spaghetti and meatballs? It’s a meal that most of us have probably eaten literally hundreds of times over the years, and it’s popular for a reason. But is there a way to make this family-friendly staple even more delicious? Making Molly Yeh’s Juicy Lucy Spaghetti with Meatballs isn’t much more difficult than cooking the traditional recipe. First, she makes a simple homemade marinara sauce, then cooks the meatballs, and adds it all together with the spaghetti before serving. But the meatballs are the star of the dish for two reasons:
First, instead of relying solely on ground beef to make her meatballs, Yeh adds an equal amount of spicy Italian sausage. The seasoning and spices from the sausage give the meatballs a rich flavor, and the mix of beef and pork makes for super juicy meat. But she also stuffs each meatball with a ball of fresh mozzarella, so they’re like a flavorful lava cake after cooking. When you bite into them with your fork, the melted fresh mozzarella oozes out. It’s like a restaurant meal, but surprisingly easy to make. If you don’t have fresh mozzarella on hand, you can also use low-moisture mozzarella cut into small cubes or string cheese cut into small chunks.
You can also swap out the homemade sauce for your favorite bottled marinara sauce so you can spend more time focusing on making the meatballs. We’re not the only ones who think that meatball sandwiches made with Juicy Lucy meatballs are also the best.
This isn’t the first time Molly Yeh has wowed us with her twists on family favorites, but her Juicy Lucy Spaghetti Meatballs might be one of her best.
