- Steps 1Mix the mince, egg, mustard, Worcestershire sauce, breadcrumbs, 1 teaspoon salt and plenty of freshly ground black pepper in a large bowl (this is easiest to do by hand). Divide into 8 equal portions (this is easiest to do by weight) and form each portion into a flat patty.
- Steps 2Divide the Stilton evenly between the patties, piling them up in the centre. Place a Mozzarella ball on top of each patty. Working with one at a time, carefully lift the edge of the patty to enclose the cheese filling, pinch to seal, then gently shape into a patty about 1 inch (2.5cm) thick. Repeat with the remaining patties. Arrange on a tray lined with baking paper, cover and refrigerate for 1 hour to set.
- Steps 3Brush burgers all over with oil and season with freshly ground black pepper. Grill on the barbecue or griddle for 12-15 minutes, flipping halfway through, or until cooked through and cheese is flowing. Lightly toast buns.
