Hi guys! The weather continues to be great in the River Valley. It looks like it’s going to be a little cooler this weekend. it’s okay! I didn’t have any money for several weeks, so many things happened. But now I’m back! I hope you enjoy the eclipse as much as I do. It was amazing. The temperature was dropping, it was dark, and the crickets were chirping. I just thought it was a great experience. There was a solar eclipse festival downtown on Saturday. We had delicious food, music, crafts, and lots of laughter. To say I was tired would be an understatement. After it was over, I said, “I feel like I’ve been to Florida and back again in one day.” I think Marie Clopton used to say that line. It’s been a long time since I felt this tired. I guess I’m getting old. The next big event is Independence Day. Time passes quickly, and before you know it, you’ll be here.
My nephew and niece lost their mother this past weekend. I met them at my nephew’s house on Sunday. You all know who it is, but I helped them write the obituary. I laughed and cried. Losing your mother or father is very difficult. We were having a funny conversation when my nephew leaned back in his lawn chair and fell backwards. He kept falling for days. His cell phone fell into the driveway. His feet were in the air. We laughed and laughed. The next day he was quite sore. You have to laugh when someone falls, you can’t help yourself. Autumn continues in our family. My niece Kelly was very depressed. She fell one day at Barton Pool and Spa and was so injured that she couldn’t even drive her car. She had to have her underage daughter drive her home. I fell down so much that when Jacob got married and moved out, he wanted to know who would wake me up if we moved. He was always joking. He liked to say Howard Cosell’s famous line, “Frasier is fading!” He said this as I was about to collapse. I fell once while helping his mother with a yard sale. I was holding a box of glassware in both hands. Let me tell you, I saved it, but it crashed hard. When I was 8 years old, I fell off the swing at his house and broke his arm. Our family has a clumsy personality. Enough about falling. I might even jinx myself. This week’s recipe is jelly cheesecake. I hope you all enjoy it too. lemon jelly cheesecake
8 oz.Cream cheese
3 oz lemon jelly
1 cup boiling water
6 oz sweetened condensed milk
1 teaspoon vanilla extract
2 tablespoons lemon juice
Bought graham cracker crust at 1 store
Place cream cheese in a large bowl and beat until fluffy. Next, add the sweetened condensed milk and mix until homogeneous. Sprinkle with lemon jelly, pour boiling water (make sure to use boiling water), add lemon juice and vanilla. Mix everything until nice and creamy. Pour in the graham cracker crust and chill for about 4 hours. If you want to try other flavors, you can also change it up by making jelly in different flavors, such as lime, strawberry, or orange. This is perfect for church dinners or any time you want cheesecake. enjoy!
