Hi guys! Today is a wonderful day and I am very happy. I love this time of year.

This article is about weather and storms. I don’t like storms. I was never afraid of storms as a child or young adult. On the other hand, my mother was scared to death of storms. I mean, she’s going to be nervous. As a child, it is scary to see her parents falling apart. She would say, “Howard, go outside and watch the storm!” My sweet daddy would go out on the porch and look around. This is not an exaggeration, but every time he came home and said, “It’s all around us.” My mother just freaked out and started screaming, “We’re going to be blown away by a storm!”

We didn’t have a storm cellar. There was one in the house across the street from where we lived, next to the sawmill in Mansfield. Mrs. Henson had a storm basement, so when there was a storm, Mom always wanted to go to Mrs. Henson’s basement, but Dad refused. One night it was pouring rain and there was a crazy storm and her mother was scared to death as usual. Whether her dad likes it or not, she decides to take out the big guns and go to Mrs. Henson’s basement. So she took out a garbage bag and put it over me, her sister Pam, and her. I head into the basement through the rain and wind. we can’t see anything. It’s raining a lot. When we got there, the entire Clopton family and some of Marie Clopton’s adult children were already in the basement. Let me tell you, we were stuffed in there like sardines. Pam and I are in the middle, dressed in flashy garbage bag costumes. As I said, there was no place to sit and we were crammed in there like sardines. We held out until the storm was over. Nothing was blown away and all was well with the world. This happened several times. When I was a teenager, my girlfriend’s mother told me to go to a shelter because a storm was coming, but I refused. Here she came with a flyswatter and she threatened to whip me if I did not accompany her. Needless to say, I went with her. We also survived that storm.

I was never afraid of storms until a big tree fell on my house in a storm a few years ago. Since then, I try to keep an eye on the radar and listen to the sirens of the city. Arashi is no joke. I’m not as scared as my mom, but I’m a little nervous right now. Okay, enough about the storm. It’s very dark outside and I don’t like it.

Let’s talk about food and how much I love eating and baking. I don’t know if I’ve told you all this, but me and a few of my friends go out to eat almost every Friday night. Try different diners. We went to Pam’s Hateful Hussy Diner in Talihina. It’s one of my favorites. I think the best burger I’ve ever had is Patrick’s Butcher Boy. My favorite thing is dessert. This week it’s Peanut Butter Delight. Enjoy and have a blessed week!

peanut butter delight
The first layer is the dough: 1 cup flour, 1/2 cup softened butter, 1/4 cup sugar, 1 cup crushed pecans.
2nd layer: 1/3 cup peanut butter, 18 oz package of cream cheese (at room temperature), 1 cup powdered sugar, 1 8 oz tub. Cool Whip (half used for this layer)
Layer 3: 2 packages (3.4 oz) of chocolate pudding, 2 2/3 cups of cold milk
For the crust, mix all ingredients together, press into a 9×13 baking dish (sprayed with cooking spray), and bake at 300 degrees for 15 minutes or until light brown. For the second layer, mix peanut butter, cream cheese, and 1 cup of powdered sugar until creamy, then add half of the Cool Whip and mix well. Make sure the dough is cool and spread this layer on top of the dough. For the third layer, mix the chocolate pudding and milk until thickened and spread on the second layer. Top with remaining Cool Whip. You can sprinkle with small wreath cups, or you can chop up larger ones and place them on top. Store in the refrigerator until ready to serve.
