Chicken salad is the perfect summer food. It’s delicious on a hamburger bun with coleslaw, or on its own with crackers. This juicy recipe is packed with flavor and is sure to be a big hit.

Garten begins by cutting cherry tomatoes in half and adding broccoli florets. She quickly blanchs the vegetables and puts them in ice water to give them a “shock.” “You’ll end up with perfectly cooked, bright green broccoli. That’s what really sets the color,” she explains.
She adds mustard, white wine, and other ingredients to a bowl and mixes everything together. She roasts her chicken and cuts it while it’s warm, but not completely cooled. “Chicken salad is so delicious when the chicken is warm,” she explains. “The sauce soaks up well.”
Finally she mixes it by hand and pours the sauce on top. “Oh, this looks so familiar!” she said, adding that her store had “a huge stock of this.” It’s very bright and delicious, so it’s no surprise that it’s popular with customers.

Others offered suggestions, such as adding “sliced onions” to chicken salad or adding “dill pickle relish” to all salads.
