About this week Episode of dinner SOSTest Kitchen director and host Chris Morocco is joined by Test Kitchen senior editor Shilpa Uskokovic to help callers Izzy and Nina find a solid baking project.
Nina and Izzy are twin sisters. They have a lot in common, especially their love of baked goods. Although the two have completed several successful baking projects together, Nina quickly realizes that when she tries baking alone, she lacks confidence and she often fails. Nigella Lawson’s honey pie recipe turned out to be particularly disastrous, prompting her to call SOS for dinner. Chris recruits Shilpa to brainstorm recipes for delicious and easy baking projects without too much effort to help Nina build the confidence she craves. Shilpa reminds us that the precision involved in baking can work in their favor. Recipe guardrails like timers, scales, and thermometers often guarantee some degree of success.
For example, Chris recommended BA’s Best Chocolate Chip Cookies, so Izzy and Nina could make that recipe a few times and experiment by substituting M&M’s or nuts for the chocolate chips, Shilpa says. Shilpa invites her sisters to try baking these chocolate chip cookie bars (no mixer needed either!) and this chocolate sheet cake. To set the sisters up for success, Shilpa gave her the option to make her cake gluten-free with this slightly easier (but still very tasty) double sheet her chocolate fudge frosting from her new recipe for her chocolate cake.
