Nicole Keshishian-Modic shared two versions with “GMA” Food.
Cottage cheese has become a huge hit on social media over the past few years, and new recipes garnering attention online are creating new uses for this calcium- and protein-packed summer staple.
Baked cottage cheese wraps take social media feeds by storm
With over 72.5 million posts on TikTok alone, baked cottage cheese wraps are becoming increasingly popular.
Like most topical recipes, this one uses only a few ingredients that most home cooks likely already have on hand and can be made in a hurry with minimal effort.
“I’ve always hated cottage cheese, but now I love it. It’s not like cottage cheese ice cream, which is salty and gross, this is amazing,” kale junkie food creator Nicole Keshishian-Modic told Good Morning America about her latest recipe for the viral flatbread. “It’s firm and holds together.”
Like those protein-packed wraps you’ll find in the refrigerated section of your grocery store (like Egg Life and other thin gluten-free wraps), this recipe uses eggs as a binder, mixed with cottage cheese, and baked in a thin layer on a parchment-lined baking sheet to create a sturdy, edible canvas free of flour and additives.
Once you have the bread-like base, you can make wraps, flatbreads, etc., depending on your personal preference.
2 recipes for the popular cottage cheese flatbread wraps
Modic shared two versions of the recipe she tried out: the original and a spinach version to add some vegetables and color.
“My version includes spinach, Parmesan cheese, fresh garlic, and Italian seasoning,” she writes in the recipe. “Fill it however you like; I used garlic spread, turkey, salami, and tomatoes, plus more spinach and homemade marinated onions.”
make: 2 flatbreads (half the recipe for 1)
material
8 ounces full-fat cottage cheese (Modic prefers Good Culture).
2 eggs
3-4 tablespoons grated Parmesan
2 cloves of garlic
1 teaspoon Italian seasoning
direction
Preheat oven to 350 F. Line a baking sheet with parchment paper (I used 1/4 sheet).
Add all ingredients to a food processor or blender and process and blend until smooth, about 45 seconds to 1 minute.
Use a silicone spatula to spread the batter evenly onto the baking paper. Bake for 30-35 minutes or until the top is set (depending on your oven this may take 40 minutes). Remove from oven and allow to cool completely.
Then remove from the parchment paper and fill with your favorite toppings.
Repeat with remaining dough to make 2 flatbreads.
To make the spinach version: Place a generous handful of fresh spinach in a blender along with the other batter ingredients and follow the recipe above.
