Sexy Steak, Detroit’s new Italian steakhouse, opened earlier this year in the Grand Army of the Republic building by Prime Concepts Detroit. Here, the restaurant presents a recipe for spicy shrimp diabolo.
material
- 3 large shrimp (size U8 on package)
- 2 cloves of garlic
- 1/4 cup extra virgin olive oil
- 2 tablespoons chopped green onion
- 1/2 cup tomato soup
- 6 tablespoons Chablis wine
- 1 teaspoon Calabrian chile
- 6 tablespoons lemon juice
- 6 tablespoons unsalted butter
- 1 teaspoon chopped fresh parsley
- Appropriate amount of salt and black pepper
- 3 crostini (toasted baguette)
- Fried green onions (for garnish)
- Microgreens (for decoration)
- 1/2 charred lemon (for garnish)
direction
- Preheat a frying pan over high heat. Add oil and shrimp and season with salt and pepper.
- Cook for 1 to 2 minutes on one side, then flip the shrimp. Add garlic and green onions and continue cooking for 1 minute. Deglaze the Chablis wine in a saucepan.
- Add tomato soup, lemon juice, butter, and Calabrian pepper. Continue reducing until the sauce is thick enough that the sauce will stick to the spoon when you dip it.
- Add parsley and season with salt and paper.
- Place each shrimp on crostini and pour the sauce over them.
- Serve the fried green onions and microgreens on top of the shrimp. Garnish the plate with the charred lemon.
