What do you need to make vegan crumpets?
These vegan crumpets are made by simply mixing together flour, soy milk, yeast, and a little sugar.
You will also need a large pot with a flat base to fit four appropriately sized crumpet rings.
You can buy crumpet rings online or at kitchen supply stores, but you can also use heat-resistant rings or cookie cutters, which are about 1 inch (3 cm) high and the shape and size you want the crumpets to be.
If you happen to have egg rings from your pre-vegan days on hand, you can use them as a substitute, but they make smaller crumpets.
If it is completely impossible to obtain a suitable substitute, you can also spoon the dough directly into the mold without using the ring. This will result in a crumpet that is a little wider and flatter than usual, and less uniform, similar to a cross between a pancake and a crumpet.

Keeping the yeast alive and active is essential to giving crumpets their characteristic bubbly texture.
The optimum temperature for yeast is between 27 and 32°C, but be careful not to overheat the milk as anything above 50°C will likely kill the yeast completely.
The soy milk should feel lukewarm to the touch.
Even if you want to enjoy delicious toppings on your crumpets, don’t skip the sugar.
The small amount of sugar does not affect the flavor and is essential to nourish the yeast.
