- step 1Preheat the oven to 200°C (180°C fan) mark 6. In a large bowl, combine potatoes, broccoli, 1 tablespoon oil, and plenty of seasoning. Place the potatoes in a medium roasting tin and cook for 30 minutes or until they start to turn golden brown, adding the broccoli during the last 10 minutes.
- step 2In an empty bowl, combine mustard, honey, remaining 1 tablespoon oil, and generous amount of seasoning. Carefully remove the mold from the oven and stir in 1/2 of the mustard mixture. Add the salmon fillets to the bowl with the remaining mustard mixture and turn to coat.
- step 3Arrange the fish on top of the vegetables, then return the pan to the oven and bake for 12 to 15 minutes, or until the salmon is cooked through and the vegetables are tender. serve.
