This is an all-time favorite. Not only is it one of the best recipes for cooking wild bluefish, it’s also one of the oldest — a time-honored tradition passed down for generations from father to son and mother to daughter up and down the East Coast.

We’ll get to the recipes later. First, let’s talk about bluefish fishing. By mid-July, the little snappers seem to grow into giant 2-3 foot bluefish. Every boat on the coast is fishing for bluefish. It may get dirty, bloody, and a little smelly, but at the end of the day, there are few fish in the ocean that fight as hard as a bluefish. All you need is a bunker or a shiny jig and the ability to reel fast. Now you can target bluefish in deep water. Once you get a bluefish on your hook, you will know the difference. This is not a sport for those with weak wrists. A 10 pound bluefish will feel like a 50 pound bluefish fighting to stay in the water. Bluefish will run under the boat, tangle lines, break lines, loose tackle, and many other problems. But if you can catch one bluefish, it’s a good day. You’ll feel accomplished. You’ll thank me later. First, get yourself a bluefish filet. On board, the first mate will fillet it for you. Next, get a big cedar plank, like the ones used for salmon. Rub the plank in an oil with a high smoke point, like avocado oil.
Next, sprinkle the plank with a little salt and pepper. Place the grill on low to medium heat. Next, remove the bluefish fillets from the plastic bag and make sure to rinse them with cold water. Next, wrap the fish in three or four layers of newspaper. Wrap it tightly. Next, remove the cedar plank from the grill. Next, remove the wrapped bluefish and gently discard it in the trash. Wait until the cedar plank has cooled slightly before serving.
