CLEVELAND, Ohio (WJW) — When it comes to fruit cobbler recipes, country chef Lee Ann Miller is your go-to recipe box. Lee Ann says the recipe can be made with any fruit, but in this episode of Fox Recipe Box, she teaches Fox 8’s Stephanie Schafer how to make a fruit cobbler using peaches. Fruit Cobbler
4 cups of fruit (cut)
Peach, blueberry, black raspberry, apple
2/3 cup brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon cinnamon
2 tablespoons butter, chilled and cut into pieces
1/3 cup solid shortening
2 tablespoons white sugar
1 egg
1/2 teaspoon vanilla
1 cup all-purpose flour
1 1/2 teaspoons baking powder
5 tablespoons of milk
Wash and chop fruit (except berries). Grease a 9 x 13-inch baking pan and add fruit. Combine brown sugar, 2 tablespoons flour, and cinnamon. Sprinkle over fruit and top with chopped butter. With a hand mixer, combine shortening, sugar, eggs, and vanilla. Then with a spatula, slowly mix in flour, baking powder, and milk, alternating between each. Drop with a spoon and spread in portions. Bake at 350° for 25 to 30 minutes. Serve warm, topped with ice cream, real whipped cream, or both.
