Thai Basil Chicken – Pad Klapau Gai
Number of people: 2 people
material
For source:
1 tablespoon oyster sauce
2 teaspoons fish sauce
1 1/2 teaspoons dark soy sauce
1 1/2 teaspoons soy sauce
2 teaspoons sugar
2 tablespoons water
For chicken:
2 tablespoons avocado oil
5 cloves garlic (chopped)
1/4 shallot (chopped) (about 1 tablespoon)
3-5 Thai chili peppers, sliced or cut into more or less pieces to your liking
1/2 bell pepper (finely diced)
12 ounces ground chicken
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 cups (about 1/2 oz) Thai basil
If provided:
steamed white rice
2 fried eggs

1. Combine all sauce ingredients in a small bowl and stir to dissolve the sugar. Let’s set it aside.
2. For the chicken, heat a wok over medium heat and add the avocado oil. Add the garlic, shallots, and Thai chili peppers and sauté until fragrant, about 30 seconds. Add the peppers and sauté for 30 seconds until they begin to soften.
3. Add the ground chicken and use the back of a spatula to push it into the wok to break it up. Season with salt and black pepper and stir-fry until chicken is no longer pink, about 3 minutes.
4. Add the sauce, mix well, and simmer for about 30 seconds before adding the basil. Stir the mixture one last time before removing from the heat. Arrange the chicken over white rice and top with a fried egg.
