happy 35th anniversary of disney hollywood studios —Opened on May 1, 1989. We’re celebrating by sharing two fan-favorite recipes from the past few days so you can join in the festivities at home. We have selected and shared recipes for main dishes and desserts from two restaurants that opened in 1989.

Mama’s Traditional Meatloaf from Prime Time Cafe in the 50’s
For the first course, you will move on to: 50’s Prime Time Cafe for mom’s traditional meatloaf. 50’s Prime Time His cafe began serving classic American comfort food to guests while enjoying 50’s kitsch when Disney’s Hollywood Studios opened in 1989. There have been a few different meatloaf recipes on the menu over the years, but this one in the Disney Recipe Vault combines ground. A perfect blend of beef, ground pork, and seasoning. Serve with your favorite mashed potatoes, gravy, and of course green beans to get your veggies in!

50’s Prime Time Cafe

Serves 8 people
material
2 pounds ground beef
1 pound ground pork
4 large eggs, lightly beaten
1 cup seasoned breadcrumbs
1/2 cup chopped onion
1/4 cup finely chopped bell pepper
1/4 cup finely chopped red bell pepper
Separate 2 tablespoons and 1/2 teaspoon Worcestershire sauce
1/2 teaspoon coarsely crushed black peppercorns, or to taste
1/2 teaspoon coarse salt, or to taste
1/2 cup ketchup
1 tablespoon brown sugar
1 teaspoon Dijon mustard
direction:
- Preheat oven to 350°F. Lightly grease two 8.5-inch by 4.5-inch loaf pans.
- In a large bowl, combine beef, pork, eggs, bread crumbs, onion, green and red bell peppers, 2 tablespoons Worcestershire sauce, cracked pepper, and salt until well combined. Do not over mix.
- Divide the meat mixture in half, form into 2 loaf shapes, and place in the prepared loaf pan. Bake for 50 to 60 minutes or until internal temperature reaches 155°F as measured with an instant-read thermometer.
- Meanwhile, in a small bowl, combine ketchup, brown sugar, mustard, and remaining 1/2 teaspoon Worcestershire sauce. Brush the meatballs with the ketchup mixture and bake for another 10 minutes.
- Remove the meatloaf from the oven and let stand for 10 minutes before serving.
Cook’s Note: Meatloaf can be served with additional sauce. Double the recipe for ketchup, brown sugar, mustard, and Worcestershire sauce, reserving half to drizzle over meatloaf slices.

Grapefruit cake with Hollywood Brown Derby cream cheese icing
Now that you’ve enjoyed your main course, it’s time for dessert. Grapefruit cake with cream cheese icingfrom hollywood brown derby The perfect sweets to celebrate the 35th anniversary of Disney’s Hollywood Studios. Although the cake presentation has changed over time, it has remained on the menu since the restaurant opened in 1989.

Serves 8 people
grapefruit cake
1 1/2 cups sifted flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs, separated
1/4 cup vegetable oil
1/4 cup water
3 tablespoons grapefruit juice
1/2 teaspoon finely grated lemon zest
Cream of tartar 1/4 teaspoon
cream cheese frosting
2 packages (8 ounces) cream cheese, softened
1 teaspoon freshly squeezed lemon juice
1 teaspoon finely grated lemon zest
1 cup sifted confectioners’ sugar

1 can (16 oz) grapefruit pieces, drained well
grapefruit syrup
For grapefruit cake:
- Preheat oven to 350°F. Lightly grease a 9-by-2-inch round cake pan. Line the bottom with parchment paper and lightly butter the paper and sides.
- In a large bowl, sift together flour, sugar, baking powder, and salt.
- Whisk egg yolks, oil, water, grapefruit juice, and lemon zest in a medium bowl until smooth. Whisk in flour mixture.
- Whip the egg whites and cream of tartar with an electric or stand mixer until stiff peaks form. Fold the egg whites into the egg yolk mixture with a rubber spatula. Pour into the prepared pot.
- Bake for 25-30 minutes or until the center of the cake springs back when lightly touched. Turn the cake in the pan and let it cool on a wire rack.
- Run a spatula or table knife along the edges of the cake and carefully remove it from the mold.
For the cream cheese frosting:
- Beat cream cheese in the bowl of an electric mixer fitted with the paddle attachment on high speed until light and fluffy.
- Add lemon juice and lemon zest. Gradually add confectioners’ sugar and mix until well combined. Leave the lid on until the frosted cake is done.
To provide:
- Cut the cake in half horizontally with a serrated knife.
- Spread 1/3 to 1/2 cup frosting over the first layer to about 1/4 inch from the edges. Place some grapefruit pieces on top.
- Place the second cake layer, round side up, on top of the frosted first layer. Frost the top and sides with the remaining icing.
- To serve, garnish with remaining grapefruit pieces and desired amount of grapefruit syrup.
