Summer brings warmer temperatures and longer days, bringing with it an abundance of fresh, vibrant vegetables. It’s the perfect time to enjoy light, refreshing and flavorful seasonal produce. These two recipes make the most of your garden vegetables. Try these colorful, nutritious dishes that capture the essence of summer, making every meal an enjoyable experience.

2 cups corn kernels
1/2 cup all-purpose flour
¼ cup corn scratch
Salt and pepper to taste
1/2 teaspoon red chili powder
½ teaspoon garlic powder
1/2 teaspoon onion powder
Frying oil
chopped coriander for garnish
Method:
● Combine the flour, cornstarch, salt, pepper and other seasonings in a bowl. Stir the corn kernels into the flour until well combined.
Heat oil in a deep frying pan over medium to high heat. Test the oil by dropping a small piece of corn into it.
● Next, carefully add the coated corn kennels to the hot oil in small batches and deep fry until golden and crisp, about 2-3 minutes per batch.
● Using a slotted spoon, remove the corn from the oil and place on a plate lined with paper towels to drain off excess oil.
Garnish with chopped coriander and serve hot.

4 whole wheat tortillas
1 cup hummus
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 carrot, julienned
1 cucumber (sliced into strips)
1 cup red cabbage, thinly sliced
1 avocado (sliced)
1 cup spinach
1/2 cup cheddar cheese
Fresh herbs (chopped)
Taste with salt and pepper.
Method:
● Place the tortillas on a clean surface and spread a generous amount of hummus on top of each tortilla.
● Place the sliced vegetables on top of the hummus: first the bell pepper, then the carrot, cucumber, red cabbage and avocado, leaving a little space on each side so that they can be easily rolled up.
● Next, scatter the spinach over the vegetables, then sprinkle the cheese and chopped fresh herbs on top. Season the top with salt and pepper.
● Carefully roll up the tortillas, tucking in both sides to seal tightly. Finally, cut each wrap in half diagonally.
Serve wraps immediately.
