GREENSBURG – Fair season is upon us, last week my granddaughter and I participated in the dress review and 4-H judging at the Bartholomew County Fair, and our fair is just around the corner.
Maybe you’re just putting the finishing touches on your Open Class project. Call the Extension office and let us know what you plan to enter. The pre-entry form will help speed up the process on entry day. List what you’ve created beyond the 2023 fair. Let’s enter lots this year!
Here are some of our favourite recipes.
Baked Pizza Casserole
brown:
1 pound ground beef
Cook according to package directions.
1/2 box of bowtie pasta and 1/2 t salt
addition:
24 ounce jar of spaghetti sauce (rinse jar with a little water)
1/2 pack pepperoni
1 tsp Italian seasoning (optional)
Mix together and pour into a greased casserole dish. Cover and bake in a 350 degree oven for 1 hour. Remove, sprinkle mozzarella cheese on top and bake uncovered until cheese is melted.
Note: You can add mushrooms, peppers, onions, etc. If made a few days in advance, freeze and bake for 2 hours.
Apple Cake
Place in a bowl and leave until the sugar dissolves.
2 cups apples (chopped)
1 cup sugar
addition:
1 beaten egg
Sift together and add to the apples:
1 cup flour
1/8 t of nutmeg
1 1/2 tsp cinnamon
1 tsp baking soda
1/2 cup nuts
Pour into an 8 x 8 inch loaf pan.
sauce:
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons flour
1 cup water
Cook until clear and add:
1 t vanilla and ¼ cup butter. Pour into cake batter. Bake in a 375 degree oven for 40 minutes.
vegetable salad
combine:
2 -15 ounce can of French-style kidney beans, drained
2 -15 ounce canned peas (drained)
4 celery sticks, finely chopped
1 large onion (chopped)
4 ounces pimentos (drained)
Salt and pepper to taste
Mix and pour over vegetables:
1 1/2 cups sugar
¼ cup vegetable oil
1/2 cup apple cider vinegar
Marinate for 24 hours. Drain off the liquid before serving.
