CHICAGO (WLS) — The weather has been so nice in the Chicago area that Thursday’s Cooking Up a Storm had a summer-like feel.
Located along the Chicago River in downtown Chicago, Pizzeria Portofino is known for its unique pies.
But other menu items like spritzes and salads are also getting a lot of attention.
Jeff Smil of Pizzeria Portofino joined ABC7 Chicago on Thursday to create a Mediterranean salad.
Salad ingredients:
– 8 cups chopped romaine lettuce
– 2 pinches of salt
– 4 turns of fresh black pepper
– 1/4 cup Kalamata olives (seedless)
– 1/4 cup sliced cucumber
– 1/4 cup sliced radish
– 1/4 cup sliced red onion
– 1/4 cup sliced baby peppers
– 1/4 cup chopped pepperoncini
– 1/4 cup crumbled feta cheese
– 1/4 cup cherry tomatoes, halved
Italian vinaigrette ingredients
– 1 teaspoon red wine vinegar
– 1 teaspoon lemon juice
– 1 teaspoon water
– 1/4 teaspoon sugar
– 1 pinch of oregano
– 2 tbsp.Olive oil
– 1/4 teaspoon shallot, finely chopped
– 1/4 teaspoon garlic confit, crushed
– 1 pinch of fine sea salt
– 1 pinch of black pepper
– 1 pinch of chili flakes
You can also enjoy it as a meal by adding Pizzeria Portofino’s popular grilled salmon to the salad. Or, buy a warm rotisserie chicken from your local grocery store and shred it on top. Adding shrimp is also a good option. The light Mediterranean flavor is perfect for pairing with seafood.
Serve it to your summer party guests with pizza or your favorite pasta like rigatoni alla vodka.
