World Chocolate Day, celebrated on July 7, is a day to celebrate the depth of chocolate flavour. From milkshakes to sweets, chocolate is used in a variety of recipes, including savoury snacks with a modern twist, and is the perfect gift for the kids at home.

If you’re looking to try some new recipes this World Chocolate Day, there’s no better place to look for inspiration than a chocolatier. Chef Mahesh Pal Singh, head chocolatier at artisanal chocolate brand SMOOR, shared two exclusive recipes with Slurrp.
- 40 grams milk chocolate
- 40 grams of dark chocolate
- 3.2 grams coconut powder
- 16.8 grams peanut butter
- 0.4 grams salt
Method
The chocolate tempering process
- Reserve one third of the chocolate and melt the rest in the microwave, making sure the temperature does not exceed 45°C.
- Add the reserved chocolate to the melted chocolate and continue stirring until there are no lumps, the mixture is smooth and the temperature reaches 31°C.
- Spread the chocolate onto the baking paper – if it’s perfectly tempered, it will release easily while showing off a firm texture and shiny surface.
How to Make Salted Peanut Bark
- Temper the milk and dark chocolate separately and mix well.
- Add peanuts, coconut flour, butter and salt to the mixture and mix well.
- Place a sheet of parchment paper on a clean table and use a spatula to spread the chocolate mixture on it.
- Using a rubber spatula will help you spread the mixture better and ensure all edges are the same thickness.
- Once the bark has hardened, break it into small pieces.
- Store in an airtight container and enjoy a delicious snack anytime.
Fruit and nut chocolate bar
- 79 grams of dark chocolate
- 11 grams of your choice of fruits and nuts (almonds, raisins, cashews)
Method
- First, set aside one-third of the chocolate in a separate bowl.
- Melt the remaining chocolate in the microwave and add the remaining solid chocolate.
- Run a test to ensure your dark chocolate is perfectly tempered.
- Take a chocolate mould and pour the tempered chocolate into each section.
- Top each mold with your favorite fruits and nuts.
- Tap the tray gently on the counter to remove any air bubbles.
- Chill the mould in the fridge for 10-15 minutes and let it set before serving to your loved ones and guests.
