- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 100g broccoli florets
- 100g (4oz) snow peas
- 4 oz (125 g) carrot slices
- 1 tablespoon oil
- 1 clove of garlic (chopped)
- 1 small white onion (thinly sliced)
- 1/2 red bell pepper (thinly sliced)
- 1/4 teaspoon salt
- 3 tablespoons oyster sauce
- 1/4 cup (125 ml) chicken stock or broth
Instructions:
- In a small bowl, combine cornstarch and water to form a slurry. Let’s set it aside.
- Blanch the broccoli, green beans, and carrots. Place the vegetables in boiling water for 1 minute. Remove and drain. Transfer to an ice water bath to cool, drain and set aside.
- Heat oil in a wok or skillet over medium-high heat. Add garlic, broccoli, green beans, carrots, onion, red pepper, and salt and sauté for 1 to 2 minutes.
- Add oyster sauce and chicken stock, mix and heat until boiling. Pour in the cornstarch mixture and continue to cook, stirring constantly, until the sauce thickens and all ingredients are nicely coated, about 30 seconds.
- Serve immediately with piping hot jasmine rice.
