clock: Chris Valdes shares his barbecue recipes
Chef Chris Valdes is a Miami-born author, chef, and celebrity caterer, best known for being a finalist on Food Network Star’s “Star Salvation.”
In preparation for this weekend’s Memorial Day celebration, Valdes returned to the “Good Morning America” studio on Wednesday to share some of the best dishes to serve at a barbecue party.
From burgers to salads to desserts, he covers it all.

mexican street corn macaroni pasta salad
Preparation time: 15 minutes
Cooking time: 10 minutes

1 box of boiled and drained macaroni
5 ears of fresh corn, peeled and grilled, corn kernels removed
¼ cup mayonnaise
¼ cup sour cream or plain Greek yogurt
2 cloves of garlic, minced
Zest and juice of 1 lime
¼ cup chopped green onions
¼ cup crumbled feta cheese
¼ cup coriander, finely chopped
¼ cup red onion, diced
1 jalapeño, diced (optional)
Salt, chili powder to taste

1. Combine ingredients in a large bowl. Season to taste with salt and chili powder. Chill until ready to serve.
Smash Burger with Garlic Aioli
Preparation time: 10 minutes
Cooking time: 5 minutes
Estimated time: 15 minutes

Form 2 pounds of 80/20 hamburgers into 8 loose balls.
8 slices of American cheese
4 brioche buns (buttered)
A pinch of salt
For garlic aioli
2 cups mayonnaise (vegan mayonnaise is fine)
1/2 cup red wine vinegar
10 cloves of peeled garlic
1/4 cup fresh chopped coriander
3 tablespoons chili powder
direction
1. For the garlic aioli, combine all ingredients in a food processor and pulse until thoroughly combined and has a puree-like consistency. Set aside.
2. Heat griddle to 375 degrees F. Once hot, place balls of hamburger on hot griddle, place a sheet of parchment paper on top, and press with a hamburger press to make the patties as thin as possible without breaking them apart.
3. Sprinkle with seasonings. Cook for 2 to 3 minutes or until browned and caramelized. Flip, season, and cook until the other side is brown and caramelized. Top each meat patty with American cheese and bake until the cheese is completely melted.
4. Toast the inside of the brioche bun until crispy. Spread garlic aioli on the inside of the bun, place on the meat patty, and serve with your favorite toppings.
Five-ingredient Grilled Sweet Plantains with Dulce de Leche Ice Cream
Preparation time: 5 minutes
Cooking time: 15 minutes
Duration: 20 minutes
Serves: 4

4 ripe (dark) bananas
5 tablespoons unsalted butter (room temperature)
1/2 cup brown sugar
A pinch of cinnamon
dulce de leche ice cream
direction
1. Preheat grill to 450 degrees. Cut plantains in half lengthwise, leaving the skins on.
2. Spread butter on exposed banana halves. Sprinkle with cinnamon and brown sugar.
3. Start by grilling the plantains flesh side down. Grill for 10 minutes until the plantains are slightly tender. Flip the skin side over and grill for about 4 minutes.
4. Serve warm and top with dulce de leche ice cream or your favorite ice cream.
