Chef Chris Valdez is a Miami-born author, chef, and celebrity caterer best known as a finalist on Food Network Star’s “Star Salvation.”
To help prepare for this weekend’s Memorial Day celebrations, Valdez returned to the “Good Morning America” studio on Wednesday to share some of the best dishes to serve at a barbecue party.
From burgers to salads to desserts, he has it all covered!

Mexican Street Corn Macaroni Pasta Salad
Preparation time: 15 minutes
Cooking time: 10 minutes
Total time: 25 minutes

1 box of boiled and drained macaroni
5 ears of fresh corn, peeled, grilled and with kernels removed
¼ cup mayonnaise
1/4 cup sour cream or plain Greek yogurt
2 cloves of garlic (chopped)
Zest and juice of 1 lime
¼ cup chopped green onions
¼ cup crumbled feta cheese
1/4 cup finely chopped coriander
1/4 cup red onion (chopped)
1 jalapeño (diced) (seeds are optional)
Salt, chili powder to taste

1. Combine and ingredients in a large bowl. Season to taste with salt and chili powder. Chill until ready to serve.
Smash Burger with Garlic Aioli
Preparation time: 10 minutes
Cooking time: 5 minutes
Duration: 15 minutes

Form 2 pounds of 80/20 hamburgers into 8 loose balls.
8 slices of American cheese
4 buttered brioche buns
a little salt
For the garlic aioli
2 cups mayonnaise (you can also use vegan mayonnaise)
1/2 cup red wine vinegar
10 garlic cloves, peeled
1/4 cup chopped fresh cilantro
3 tablespoons chili powder
direction
1. To make the garlic aioli, place all ingredients in a food processor and pulse until thoroughly combined and resembles a puree. Set aside.
2. Heat griddle to 375°F. Once hot, place the hamburger balls on the hot griddle, place parchment paper on top, and press with a burger press to get the thinnest patties possible without breaking the patties.
3. Sprinkle with seasoning. Cook for 2 to 3 minutes or until browned and caramelized. Flip, season, and cook on the other side until browned and caramelized. Top each meat patty with American cheese and cook until the cheese is completely melted.
4. Toast the inside of the brioche bun until crispy. Spread garlic aioli on the inside of the bun, place on the meat patty, and serve with your favorite toppings.
5 Ingredient Grilled Sweet Plantains with Dulce de Leche Ice Cream
Preparation time: 5 minutes
Cooking time: 15 minutes
Duration: 20 minutes
Servings: 4 servings

4 ripe (thick) bananas
5 tablespoons unsalted butter (room temperature)
1/2 cup brown sugar
a little cinnamon
dulce de leche ice cream
direction
1. Preheat grill to 450 degrees. Cut plantains in half lengthwise, leaving the skins on.
2. Brush the exposed banana halves with butter. Sprinkle with cinnamon and brown sugar.
3. Begin grilling the plantains flesh side down. Grill for 10 minutes or until the plantains are slightly tender. Flip and grill on the peeled side for another 4 minutes.
4. Serve warm and topped with dulce de leche ice cream or your favorite ice cream.
