Heat the milk in a pot for a while and bring it to a boil. Slowly add the rice flour, stirring constantly to avoid lumps. Add the sugar and keep stirring until it thickens. Add chopped dry fruits and crushed cardamom. Pour the phirni into a bowl. Garnish with dried fruits and saffron. Chill in the refrigerator for 2-3 hours before serving.
Sheer Kurma

Heat the ghee in a heavy-based saucepan and add the almonds and cashews. Stir-fry for a while and add pistachios. Fry all ingredients until crispy and lightly golden. Remove them aside. Next, add a tablespoon of ghee and add the vermicelli. Stir fry for a while on medium heat. Pour in the milk and let it boil for a while.
Next, add the roasted vermicelli and dried fruits. Stir well and check if the vermicelli is soft and cooked. Keep stirring so the milk doesn’t burn on the bottom.
Add cardamom powder, sugar and khoya. Continue stirring the mixture and turn off the gas. The sheer kurma will thicken as it cools and you can transfer it to a bowl for your guests.

Heat the ghee in a large pot and add the sliced onions. Fry until golden brown and keep aside. Add whole spices to the same pot and fry for a while. Then add mutton, ginger garlic paste, cumin powder, coriander powder, red chili powder, turmeric powder and salt. Mix the ingredients well and simmer for 10-15 minutes. Add the fried onions, yogurt, chopped mint leaves and chopped coriander leaves and mix well.
Add enough water to cook the rice. Then add the soaked rice and cook until 80% done. Heat 1/4 cup of milk in a small saucepan and add the saffron bunches.
Arrange the lamb and rice alternately on a large plate. Be sure to add a layer of rice at the beginning and end. Pour in the saffron milk and remaining ghee. Cover tightly with aluminum foil. Bake in the preheated oven for about 25 minutes. Sprinkle rosewater on top and serve with warm raita.
