Things necessary:
2 15-ounce cans black-eyed peas, drained and washed
1 yellow bell pepper, seeds removed and diced;
1/2 cup diced red onion
1 pint cherry tomatoes (diced)
1 jalapeño, seeds and pith removed, finely chopped
¼ cup chopped coriander
2 tablespoons olive oil
2 tablespoons red wine vinegar
3 tablespoons Dale’s Seasoning
1 teaspoon cumin powder
Putting it all together:
- The most time-consuming part of making Dale’s Texas Caviar is the first step: In a large mixing bowl, combine the black eyed peppers, bell peppers, red onion, cherry tomatoes, jalapeño, garlic, coriander, olive oil, vinegar, Dale’s, and cumin powder.
Pro tip: You can substitute fresh cooked or frozen black-eyed peas. 3 cups is the equivalent of 2 cans of drained black-eyed peas.
- Mix well and serve with your favorite tortilla chips.
*Can be prepared 1-2 days ahead to allow flavors to meld. To keep Dale’s Texas Caviar vibrant and fresh, simply add the cilantro just before serving.
- Note: The salsa makes about 7 cups, making a large portion perfect for entertaining.
Dale’s Smashburger
Yield: 4 servings

Remember the grill-sizzling main courses mentioned above? Yes, they’re here! Dale’s Smashburgers are perfect for the barbecue and are sure to be a crowd pleaser.
Things necessary:
1/2 pound 80/20 ground beef
¼ cup Dales reduced salt blend
1/2 teaspoon black pepper
4 toasted potato rolls (or soft golden rolls, such as brioche or Hawaiian savory butter rolls)
8 slices of American cheese
1/2 cup sliced dill pickles
1 cup shredded lettuce (iceberg or romaine)
¼ cup mayonnaise
1 cup ketchup
2 tablespoons chopped pickles + 2 teaspoons pickle juice
Putting it all together:
- In a large bowl, combine ground beef, Dales, and black pepper. Mix well but gently (avoid overmixing or overpacking the ground beef). Divide meat into 8 balls (about 3 ounces each).
- Heat a large cast iron skillet or cast iron griddle pan (flat side) over medium-high heat. Place 4 balls in the pan, evenly spaced. Press each one with the back of a heat-resistant spatula until flat. (You can use a wooden spoon to press down on the spatula as you press, which will help you apply more pressure.) Cook for 3 to 4 minutes on the first side, allowing the juices to release onto the surface of the patties. Flip to the other side (do not press with the spatula) and cook for an additional 2 minutes. Place a slice of cheese on top of each patty and cook for an additional minute. Remove from griddle and keep warm. Repeat with the remaining 4 patties.
- Meanwhile, combine mayonnaise, ketchup, chopped pickles, and pickle juice in a small bowl.
- Place each patty on a toasted bun, top with a slice of cheese, then top with another patty with cheese that has been melted on the griddle, then top with sliced pickles, lettuce and sauce.
Roasted Brussels Sprouts with Bacon and Dale’s Seasoning
Yield: 6 servings | Prep Time: 10 minutes | Cook Time: 25 minutes | Total Time: 35 minutes

No burger is complete without a tasty side, and while fries or chips are a classic, what if you wanted something a little more flavorful and easy to make? These roasted Brussels sprouts are just that, and a fun way to sneak in some veggies.
Things necessary:
1.50 pounds Brussels sprouts, halved lengthwise
2 tablespoons Dale’s Seasoning
1 tablespoon olive oil
4 slices thick-cut bacon, cut into 1-inch pieces
Putting it all together:
- Preheat oven to 425 degrees.
- In a small bowl, combine Dale’s Seasoning and olive oil.
- Place Brussels sprouts on a large baking sheet and mix with Dale’s Seasoning Mix.
- Spread the Brussels sprouts on a baking sheet in a single layer and top with the bacon evenly.
- Roast for 20 to 25 minutes, stirring once, until golden and crisp. Serve immediately.
