clock: Carnie Wilson cooks salmon and talks about new show
Singer Carnie Wilson, best known as part of the musical group Wilson Phillips, is starring in an all-new cooking show that combines mouth-watering recipes with memorable celebrity guests.
Her new show “Sounds Delicious with Carnie Wilson” will premiere on Tuesday, April 16th on AXS TV.
Wilson recently stopped by “GMA3” to share one of her delicious recipes.
Carney’s Salmon and Mango Avocado Salsa
Salmon ingredients:
Four 6 oz. Salmon fillets of uniform thickness, skinless and boneless (preferably wild Alaskan)
1 1/2 tsp.Herbs de Provence
1 1/2 tsp.salt
1/2 teaspoon black pepper
2 teaspoons rice vinegar
Juice of 1 lemon
6 teaspoons unsalted butter
Drizzle some olive oil over the salmon fillets.
Cut one lemon in half and squeeze it after cooking.
Rice ingredients:
1 cup long grain white rice
1 cup of water
1 cup chicken soup
1 tablespoon butter
1 teaspoon salt
Mango Avocado Salsa Ingredients:
1 large mango, cut into 1/2-inch chunks
1/4 cup red onion, finely chopped
1 jalapeño, finely chopped
2 tablespoons.red bell pepper, diced
1 large ripe avocado
juice of 1 lime
1/2 teaspoon salt or more to taste
1/8 teaspoon pepper
How to make rice:
Prepare 1 cup of water, chicken broth, and 1 tsp. salt and 1 tbsp. Bring the butter to a boil.
Add the rice and reduce the heat to low. Cover and cook for about 15 minutes.
Remove from heat and let stand on the pot, uncovered, for about 10 minutes.
Set aside to keep warm.
Optional: Add 1 tbsp and stir. Add butter just before serving.
How to eat salmon:
Preheat oven to 400 degrees.
Place salmon fillets in a 9 x 11 baking dish. It is large enough to fit all 6 parts.
Drizzle with olive oil.
Sprinkle the salmon fillets evenly with salt, pepper, and herbs de Provence.
Squeeze lemon juice over the fillets and sprinkle with rice vinegar.
For each fillet, place two small pieces of butter on top.
Bake for about 12-15 minutes depending on thickness, until cooked through, but not overcooked.
Directions for Salsa:
Combine all ingredients in a bowl and mix gently, then add the avocado and lime juice.
Offering tips:
Serve salmon over rice and serve with salsa.
Optional: For extra flavor, squeeze a little lime over the rice and add a little more butter.
