Food blogger and recipe developer Jason Goldstein appeared on “Good Morning America” ​​with three rainbow-colored recipes for anyone looking to cook up some festive food this month.

Pride Summer Roll

4 round rice paper sheets

1 mango (sliced ​​into strips)

1 avocado, slivered

1 red bell pepper, diced

1 orange pepper, sliced

1/4 red cabbage, shredded

2 teaspoons each of salt, pepper, and garlic powder

Juice of 1/2 lime

Season the vegetables and fruit with salt, pepper and lime juice and let sit for 15 minutes to absorb the flavors.

Soak the rice paper in warm water for 15 seconds to moisten it. Working quickly, place the pliable rice paper on a cutting board and place 2 mint leaves in the center of the rice paper, followed by 3 slices of red bell pepper in the center, next to them 3 slices of mango, 3 slices of avocado, 3 slices of orange bell pepper, and 3 slices of red cabbage.

Fold the left and right ends over the vegetables and roll up to form a spring roll.

Cut into the center to reveal the rainbow vegetables, then repeat with the remaining rolls.

Serve with peanut sauce, ranch dressing, or your favorite dipping sauce.

Tips

You can make this 2 days ahead. Wrap each roll in a damp paper towel to prevent them from drying out, then wrap each roll individually in saran wrap to keep them from sticking to the other rolls. Place in the refrigerator.

You can make it colorful by using vegetables and meat.

Rainbow tie-dye roll cake

6 eggs (yolks and whites separated into separate bowls)
1 cup sugar
2 teaspoons of vinegar
1 1/2 cups cake flour
1 teaspoon salt
2 tablespoons cold water
2 cups whipped cream

Crack 6 eggs and separate the yolks and whites into 2 bowls and set aside.

In the bowl with the egg yolks, mix 1/2 cup each of sugar, vinegar, flour, salt, and cold water and set aside.

Next, in the egg white bowl, beat the egg whites with the remaining 1/2 cup sugar until stiff peaks form. Using a rubber spatula, gently fold the egg whites into the egg yolk mixture.

Divide the batter evenly among 5 bowls.

Add about 10 drops of a different food coloring (red, orange, yellow, and blue) to each bowl.

Line a baking sheet with parchment paper and spoon each color of batter into it, adding just enough batter to cover the baking sheet but not overflowing.

Bake at 400 degrees for 8 minutes. Remove the cake from the oven and while it is still warm, roll it up like a roll cake using baking paper. Place in the refrigerator for 30 minutes to cool.

Unfold the cake, add whipped cream, roll again and serve.

Tips

This cake can be made in advance and left rolled up until ready to eat.

Using cake flour with cornstarch added to plain flour will make the cake softer and easier to roll out.

It can be made gluten free by using gluten free flour.

Whipping egg whites makes a fluffy cake.

This is great for the whole family to do and looks great in the center of the table.

Pride Punch

Serving Size: 2 drinks

2 cups ginger ale
2 cups white grape juice
1/2 cup strawberries
1/2 cup cantaloupe
1/2 cup pineapple
1/2 cup green grapes
1/2 cup blueberries

Mix cold ginger ale with grape juice. Add blueberries, grapes, pineapple, and cantaloupe to each cup, then top with strawberries. Then pour the punch into two glasses.

Tips and Hacks
You can use any type of fruit you like.
Freezing fruit will act as ice to keep your drinks cold.
Mixing cranberry juice with ginger ale will cut down the sweetness a bit.
