While some see food simply as a means of survival, this north Minneapolis-based organization uses food as a tool to build health, wealth and social change.
GOLDEN VALLEY, Minn. — One of the fundamental principles of life is that humans need to eat to survive.
Appetite for Change is about food as nutrition, but it’s also about so much more.
Founded by three diverse and powerful women, Latasha Powell, Princess Titus, and Nicole Powell, the north Minneapolis-based organization is dedicated to using food as a tool to build health and wealth and inspire social change.
They visited KARE 11 on Saturday to talk about their new cookbook, “Appetite For Change: Soulful Recipes from a North Minneapolis Kitchen,” which is chock-full of recipes and story-driven ideas born from 12 years of working with local youth to plant and tend community gardens, teach cooking classes and deliver lunches to those in need.
Among the recipes is one for black bean burgers.
- 2 large eggs
- 4 cloves of garlic
- 1 green pepper
- 1 cup mushrooms
- 1 medium sized onion
- 1.5 teaspoons chili powder *optional
- 1 teaspoon cumin
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Salt and pepper to taste
- 2 cups rolled oats
- 1/2 tablespoon olive oil
- 4 cans of black beans
- Cheese Selection

- Hamburger buns
- 2 bowls, mixing spoon
- can opener
- Baking sheet
- Frying pan
- knife

- Rinse cans before opening them and wash vegetables before cutting them.
- Rinse the beans thoroughly under cold running water and set aside.
- Using a cutting board, finely chop the peppers, onions, mushrooms, and garlic.
- Add 1/2 tablespoon olive oil to a skillet over medium-high heat, slowly add the chopped vegetables and cook for 2 minutes until tender, then remove from heat and cool.
- In a large bowl, add the black beans, oatmeal, eggs, cooled mushrooms, onion, bell pepper, and measured seasonings.
- Wear gloves and mix with your hands until everything is well combined.
- Place a sheet of parchment paper on the countertop and use a portioning scoop to portion out the mixture and begin shaping the burgers for cooking.
- Lightly oil a frying pan using your favorite cooking oil and cook the bean burgers for 5 minutes on each side, do not mash them. If desired, add cheese to the burgers and allow to melt before serving.
