Air Fryer Orange, Cranberry, and White Chocolate Scones Recipe

It’s very easy to make. There is no need to stretch the dough or use special cutters. Try it with your favorite cup.

Preparation time: 15 minutes + cooling time

Cooking time: 10 minutes

material

  • 190g self-raising flour, extra for dusting
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 30g chilled unsalted butter
  • 1 teaspoon grated orange peel
  • 200g non-fat vanilla Greek yogurt
  • 10g white chocolate chips
  • 10g dried cranberries (chopped into small pieces)
  • a little milk for the glaze

for icing

  • 25g powdered sugar
  • a little fresh orange juice

Method

  1. Place the flour in a bowl. Add baking powder, baking soda, and a pinch of salt and mix well.
  2. Grate the butter and use your fingers to mix it into the flour to form something similar to breadcrumbs.
  3. Add the orange zest and yogurt, stir with a spatula until everything is well combined, then add the chocolate chips and cranberries.
  4. Roll the dough ball around the bowl to collect any dough that clings to the sides.
  5. Place the dough on a lightly floured surface and flatten it slightly into a circle about 20cm in diameter. Cut the circle in half, then in half again. Cut each piece in half again until you have created 8 wedges from the circle.
  6. Preheat the air fryer to 180°C for 2 minutes.
  7. Line your air fryer basket with nonstick baking paper or use a grill pan insert.
  8. Add the scones, brush the top with a little milk and bake for 10 minutes.
  9. Remove from the air fryer and let cool on a wire rack.
  10. While the scones are cooling, make the icing. Mix together the powdered sugar and fresh orange juice, adding 1/2 tablespoon of orange juice at a time, until the icing is drizzle-like, not too thick or too thin.
  11. Drizzle the icing over the scones and enjoy.
