All the fun of pizza, without all the hassle of making dough. This is the perfect pizza to share with friends on a Friday night. Let everyone eat the whole ciabatta with their favorite toppings. Serve with a big crunchy green salad.

- 1 loaf of ciabatta bread
- 2 tablespoons dried oregano
- 250g mozzarella cheese
- 1 handful of fresh basil leaves
For tomato sauce
- 3 tablespoons olive oil
- 2 cloves of garlic, thinly sliced
- 1 can of chopped tomatoes (400g)
Plate (optional)
- A few chilli flakes
- 1 handful of black olives
- Anchovies (in a jar or can)
- Artichokes in a jar
- Sun-dried tomatoes in a jar
Method
- To make the sauce, add the olive oil and garlic to a frying pan and saute for a few minutes over medium-low heat until fragrant. Add the canned tomatoes. Fill the can about a quarter full with water, stirring to release any remaining tomatoes. Pour into the pan. Season with salt and pepper and simmer for 10 to 15 minutes until thickened.
- Meanwhile, prepare the ciabatta and toppings: Preheat grill to medium-high heat. Cut the ciabatta in half lengthwise. Place on a tray and cook cut-side down for 1 to 2 minutes until lightly golden. Then flip and cook cut-side up for another 1 to 2 minutes until lightly golden.
- Taste the tomato sauce and spoon it over the ciabatta. Sprinkle with oregano, tear into pieces of mozzarella, and season with a little salt and pepper. Add your desired toppings and grill for 3-5 minutes (everyone’s grill is different so keep an eye on it) until the mozzarella is melted and lightly golden. Serve sprinkled with basil leaves and your desired toppings.
