July 18th is National DOLE Whip Day!

In 1984, Dole Packaged Foods developed Dole Pineapple Whip for The Walt Disney Company, which debuted it at Aloha Isle in Magic Kingdom Park.

Today, Aloha Ile is serving up delicious Pineapple Upside Down Cake, and in celebration of DOLE Whip Day, we’re sharing a recipe inspired by Aloha Ile’s Pineapple Upside Down Cake, topped with DOLE Whip-inspired frozen pineapple treats.

Pineapple Upside-Down Cake was popularized by the DOLE. Hosting a Pineapple Recipe Contest The name comes from when James Dole, founder of the Hawaiian Pineapple Company, asked Henry G. Hinaka to develop a machine that would automatically peel and core pineapples.

After peeling and cored the pineapple, it was sliced ​​into rings to fit more easily into cans, which led to a rise in canned pineapple and a growing need for recipes using pineapple.

This Pineapple Upside-Down Cake has a slice of pineapple on top of each cake. Add canned pineapple juice to the cake batter It adds a delicious pineapple flavor to the cake.

All this talk about pineapple is making me hungry, so let’s get to the recipe.

Pineapple Upside Down Cake topped with frozen pineapple treats inspired by DOLE Whip

material

  • 1 can (20 ounces) of pineapple slices in 100% pineapple juice (as recommended by DOLE), 6 tablespoons of canned pineapple juice (reserve for cake)
  • 4 tablespoons melted butter
  • 1/2 cup tightly packed light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger powder
  • 6 maraschino cherries

Ingredients for Pineapple Upside Down Cake

  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon coarse salt
  • 1 3/4 teaspoons baking powder
  • 3 tablespoons butter (softened)
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 6 tablespoons pineapple juice
  • 2 tablespoons milk

Ingredients for frozen pineapple

  • 1/2 to 3/4 cup pineapple juice, divided (DOLE recommended)
  • 2 cups frozen pineapple (DOLE recommended)
  • 1 cup dairy-free vanilla ice cream

Instructions:

  1. Lightly butter 8-ounce ramekins and place on a baking sheet.
  1. Drain the pineapple rings, reserving 6 tablespoons of juice for the Pineapple Upside-Down Cake.
  1. Combine the melted butter, light brown sugar, cinnamon, and ground ginger in a small bowl and mix until smooth. Spread 1/2 tablespoon of the brown sugar mixture in the bottom of each ramekin. Place a pineapple slice in each ramekin and garnish each pineapple slice with a maraschino cherry in the center. Set aside.

For the Pineapple Upside Down Cake:

  1. Combine flour, salt, and baking powder in a medium bowl and set aside.
  1. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until fluffy. Add the eggs and vanilla and mix on medium speed for 1 minute until smooth.
  1. Add the reserved pineapple juice and half of the reserved flour mixture and mix on low speed until smooth. Add the milk and remaining flour mixture and continue mixing for 1 minute until the dough is smooth.
  1. Spread 1/3 cup batter over pineapple in each ramekin.
  1. Bake for 20 to 22 minutes, until a toothpick inserted into center comes out clean.
  1. Remove cakes from oven and let cool for 3 minutes. Run a knife or offset spatula around the edge of each cake. Carefully place ramekins on a wire rack and gently lift out. Leave to cool.

For frozen pineapple treats:

  1. Combine ½ cup pineapple juice, frozen pineapple, and dairy-free vanilla ice cream in a blender and blend until smooth. Be careful not to overblend.
  1. If mixture is too thick, add more pineapple juice, 2 tablespoons at a time.
  1. Arrange on top of Pineapple Upside-Down Cake and serve immediately.
