RPM Restaurant is offering a sneak peek at the menu that will be available during NASCAR Chicago Street Race Weekend on July 6 and 7. New to the event, now in its second year, is the Skyline, a three-story elevated structure overlooking pit road and the start-finish line, offering unparalleled 360-degree views of the park, Lake Michigan, the skyline and the street course. RPM Restaurant will offer a premium all-inclusive menu, including an RPM Italian signature pasta station, fresh salads and Chicago classics such as shrimp cocktail, all-natural grilled beef tenderloin and hot dogs.

RPM Steak Millionaire Potato Salad Recipe

- 12 German Butterball Potatoes
- 3 tablespoons Dijon
- 1 1/2 cups mayonnaise
- 1 cup celery core (sliced)
- 1 cup red onion, diced
- Truffle sauce (chef’s recommendation: Savini Tartufi)
- 3 tablespoons grated Parmesan
- 3 tablespoons lemon juice
- Fresh truffles, sliced to taste
- Salt, to taste
- Pepper, to taste
Method
- Cook German Butterball potatoes in salted boiling water until tender, about 16 minutes. Poke them with a knife – they should come out easily.
- Drain and cool the potatoes and combine the Dijon mustard, mayonnaise, sliced celery cob, diced red onion, grated Parmesan, and lemon juice in a large bowl.
- Season the salad with salt and pepper.
- Sprinkle a generous amount of freshly grated Parmesan on top of the salad to add richness, or for an extravagant taste, top with thinly sliced fresh truffles.
