A popular Italian dish, “Eggs in Purgatory” are eggs slow-cooked in a tomato sauce (with some regional variations) that make a great breakfast, lunch, or dinner. Our recipe uses anchovies for extra flavor and baby spinach for a veggie boost. Cracking the eggs into a bowl before adding them to the pan keeps unwanted shells out of the dish and the yolks from cracking, so they stay soft and runny when mixed with the sauce.

High Protein Strawberry & Peanut Butter Overnight Oats

This overnight oatmeal gets a protein boost thanks to Greek yogurt, peanut butter, and soy milk, giving you 17 grams of protein per serving. We mix it with chopped strawberries, but any berries or chopped fruit would work well with this quick and easy breakfast.

Anti-inflammatory Strawberry Passion Fruit Green Smoothie

This anti-inflammatory smoothie brings out the vibrant tropical flavor of frozen passion fruit, available in the frozen-fruit section of most well-stocked supermarkets and natural foods stores. To make it with fresh passion fruit, you’ll need 4 medium-sized, ripe purple passion fruits. Cut the fruit in half crosswise, gently scoop out the jelly-like seeds, place in a blender (discard the shell), and puree until smooth. Freeze the puree in ice cube trays and then blend into the smoothie. If you can’t get any passion fruit at all, substitute frozen pineapple.

Using prepackaged steamed beets is a shortcut here. If you have cooked beets on hand, use them. Cherries sweeten the smoothie and add a fruity flavor. If you choose tart cherries, you can balance the tartness with a drizzle of honey or maple syrup.
