this week’s Episode of Dinner SOSTest Kitchen Director and host Chris Morocco will be joined by cookbook author Dan Pelosi. Let’s Eat: 101 Recipes to Feed the Soul and the Home Help Liliana prepare a meal that will feed a large crowd (while meeting the many dietary restrictions of her family).
Liliana lives with her husband and two sons, both of whom are recent college graduates. One of her sons has a dairy allergy and cannot eat salmon. Liliana has a problem with sodium and does not like vegetables such as Brussels sprouts, asparagus, avocado, or peas. Her first thought was that she needed a one-pot casserole that could be made ahead of time and would not require much cleanup. Most importantly, she needed to find protein-packed dishes for carnivores, because that is what her boys mostly want.
Chris recruits Dan Pelosi (also known as GrossyPelosi on Instagram), who grew up in an Italian-Portuguese household and is used to cooking for large crowds. Casseroles tend to be dairy-heavy, so Chris and Dan both lean toward slow-cooked meats. Dan recommends a recipe from his cookbook called “Early Dismissal Pot Roast.” It’s all one-pot, takes just 20 minutes to prep, then slow roasts in the oven for 3-4 hours. It also reheats well the next day, making it the perfect domino dinner. That’s the fancy word Liliana uses to describe a recipe that lets you use leftover protein in stir-fries, fried rice, and empanadas all week.
