Here, the winery’s kitchen shares a recipe perfect for sunny days on the lawn: French Green Bean Salad, featuring the tangy flavor of aged sherry vinegar and the sweetness of in-season peaches.

French Green Bean Salad
Serves 6

1/4 cup aged sherry vinegar
1 tablespoon Dijon mustard
1 tablespoon fresh thyme
1 shallot, finely chopped
1 cup Jordan extra virgin olive oil (or your favorite good quality olive oil), divided
4 ears of corn (husked and de-silked)
2 tablespoons crushed Aleppo peppers
1 cup kidney, haricot or Romano beans (stringed)
1/2 cup hazelnuts (roasted, peeled, and chopped)
8 cups baby arugula, stems removed and washed
1 cup frisée, green parts removed
4-6 peaches (sliced)
Salt and pepper to taste

To make the dressing, combine the sherry vinegar, mustard, thyme, shallot, salt, and pepper in a blender on medium speed. While blending, slowly pour in 3/4 cup Jordan Extra Virgin Olive Oil until emulsified. Store in the refrigerator for up to 1 week.
In a non-reactive bowl, combine the remaining olive oil, Aleppo pepper, and salt with the corn ears. Toast the corn over medium-high heat until it begins to brown. When the corn is cool enough to handle, remove the kernels from the cob and set aside.
Bring a pot of salted water to a boil and prepare an ice bath. Cook the beans in the boiling water for about 3 minutes until slightly tender. Transfer the beans to ice water and drain.
Combine all ingredients in a large bowl. Add desired amount of salad dressing and mix gently. Serve immediately.
