Oats are overrated. Even if you love oats, this quinoa version will put you off them. It’s a super easy “throw everything in the pan and bake” recipe that will make your mornings go a lot smoother. But be forewarned: this dish will leave your house smelling of cinnamon berries.
Sweet Berry Breakfast Bake [Vegan]
Ingredients needed for Sweet Berry Breakfast Bake [Vegan]
For the berry bake:
- 1 flax egg (1 tablespoon ground flaxseed and 3 tablespoons water)
- 1 cup dried quinoa (washed and drained)
- 2 1/4 cups full fat coconut milk (unsweetened)
- 2 tablespoons chia seeds (whole or ground)
- 1 1/2 tablespoons of your favorite plant-based vanilla protein powder* (optional)
- 1/3 cup maple syrup
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon sea salt
- 1 1/2 cups fresh or frozen mixed berries (you can also mix blueberries, raspberries, and blackberries)
For the coconut whipped cream:
- 3/4 cup coconut cream (unsweetened)
- 1 1/2 tablespoons maple syrup
- 1 teaspoon pure vanilla extract
- Pinch of sea salt
Final touches:
- Fresh berries
- crushed almonds or pecans
How to Make Sweet Berry Breakfast Bake [Vegan]
For the berry bake:
- Preheat oven to 350°F.
- Make the flaxseed eggs by mixing the water and flaxseed with a fork in a small bowl and letting it sit for 8-10 minutes until it thickens.
- Once the flax egg has set, add all of the ingredients except the berries to an 8×8 or 9×9 baking pan and stir well until evenly combined. I like to use a fork to “stir” the mixture so all the chunks are well combined.
- Next, mix in the berries, making sure they are visually evenly distributed so you get a little sweetness in every bite.
- Bake for 60 minutes until the quinoa is thoroughly cooked through (eat whatever you like while your breakfast is cooking!).
For the coconut whipped cream:
- Scoop the cream into a small bowl and beat until creamy. Then add the remaining whipped cream ingredients and beat lightly until combined. Refrigerate until ready to use.
- Serve warm with whipped cream, fresh berries and nuts, or just as is.
Note
- Refrigerate the coconut cream overnight – this will make the whipped cream creamier and less watery.
