Zach Turner, co-founder and general manager of Single Hill Brewing Co. in Yakima, Washington, shares the recipe for “a soft, lively, freshly hopped IPA created to take advantage of our favorite early-ripening hops,” explaining, “Strata and Centennial are harvested about a week earlier than Simcoe, which is harvested just in time to dry-hop.”

This recipe comes from a brewery that has taken full advantage of its location in Yakima, Washington, and has focused on beers made with fresh hops. Few breweries enjoy the benefits of being so close to the Yakima Valley, but the good news is that fresh hops are readily available year-round in a variety of ways and forms. This recipe offers a glimpse into Single Hill’s wet hopping process, which uses the mash tun as a hop back and manages large amounts of fresh picked hops (in this case Centennial and Strata).
