GREENSBURG – Several women from Decatur County attended the Madison Area Retreat held at Camp Higher Grounds on May 7 and 8. As always, there was an auction, bingo, skits, entertainment and educational presentations. As always, the food was exceptional.
On Tuesday night, with tornado warnings in the area, we all gathered in the basement of the warehouse. Everyone! It was basically a slumber party, lots of people came and there was singing. Thankfully, we were all soaked and no damage was done. Heavy rains washed away parts of the property and roads.
We have decided to hold a retreat in 2025. A committee of housewives will help plan and present it. We will share more details as soon as the date is confirmed.
Here are some of our family’s favorite recipes.
Hamburger Bake
2 pound hamburger
Onion (optional)
Mix together and place in a baking dish.
2 cans of cream of mushroom soup
1 x 8 oz pack cream cheese
Pour the cream mixture over the hamburgers.
Bake in a 400 degree oven for 20 minutes. Place biscuits on top and bake until biscuits are done.
Tuna Casserole
1 can concentrated cream of mushroom or celery soup
1/2 cup milk
1 can of tuna, drained (6 1/2 oz or 7 oz can)
1 1/4 cups crushed potato chips
1 cup boiled peas (drained)
Pour the soup into a 1-quart casserole. Add the milk and mix well. Add the tuna, 1 cup potato chips, and peas and stir until well combined. Scatter the remaining potato chips on top. Bake at 350 degrees for 20 minutes. Note: You can add boiled noodles or boiled potatoes if desired.
Peanut Butter Cake
1/3 cup peanut butter (smooth or chunks)
1 cup sugar
1 egg
1 cup milk
1 tablespoon baking powder
¼ t salt
1 tsp vanilla
2 cups flour
Cream the peanut butter and sugar. Add well-beaten eggs. Alternately add the milk and sifted dry ingredients. Add the vanilla. Bake in a well-greased 9 x 9 inch cake pan at 350 degrees for about 30 minutes. Decorate with peanut butter icing.
Snickerdoodle Bar
Mix until creamy:
1/2 cup softened butter
1 cup sugar
Combine and add:
¼ t salt
1 egg
1 1/2 tsp vanilla
mix:
1 cup flour
Spread into an 8 x 8 inch loaf pan lined with parchment paper. Mix 1 tablespoon sugar and 1 tablespoon cinnamon and sprinkle on top of the dough. Bake at 350 degrees for 30 minutes. The bars are done when they are set and slightly browned around the edges.
